Protein Energy Balls
Makes 15-18
A homemade alternative to store bought protein bars and easy to make with kids!
INGREDIENTS:
1/2 cup Peanut Butter
1 cup Old Fashioned Oats
1/3 cup Honey
1 Tsp Vanilla
1/2 Flaxseed Meal
6 Tbsp Mini Chocolate Chips (I used dark)
1/2 cup Dried Cranberries
Mix all ingredients in a medium size bowl until combined. Add more honey and/or peanut butter to adjust to your liking and texture. Refrigerate for 15-20 min. Use an ice cream scooper or tablespoon to scoop in hand and roll until it forms into a ball. Store in an airtight container for up to 5 days if they last that long.
